Once cooked, the fish is eaten together with bun (Vietnamese rice noodles), fresh herbs, and peanuts. The outside becomes lightly crispy while the inside remains soft and tender. The earthy flavor of turmeric blends beautifully with the freshness of the herbs, while the fish sauce-based dipping sauce ties everything together perfectly.
Although the dish is cooked with oil, it never feels too heavy thanks to the abundance of herbs. The flavor is simple yet surprisingly deep, and after trying it, it’s easy to understand why cha ca has become one of Hanoi’s signature dishes.
